Warming Lentil Stew

A cold winter day calls for a nice, warming stew. Now that it is December, the weather is only going to get colder. Colder does not mean less busy, though, so slow cooker meals are the way to go. This lentil soup will warm you right up. The use of curry makes it even warmer. I find that a bit of spice heats me from the inside out. I added in millet to make the stew a little more filling. Delicious!

Slow Cooker Curried Lentil and Millet Stew
serves 2-3
4 cups chicken broth
1 onion, chopped
2 tsp minced garlic
1 tbsp butter
½ cup dry millet
2/3 cup lentils
1 tsp curry powder
Heat the butter over medium heat in a skillet. Add the onions and garlic, and sauté until golden, about 8 minutes. Stir in the curry powder, cook for another minute, and remove from the heat. Combine all the ingredients into a small slow cooker. Cook on low for 4-6 hours.
