Double Carob Banana Bread

'Tis the season for baking! I just love pulling out a fresh loaf of bread from the oven with the smell of homey goodness wafting through the house. This is not your conventional quick bread, though, but it is not missing a bit in flavor or aroma. Carob powder and carob chips makes it double chocolate banana bread's caffeine free cousin. Delicious for everyone no matter how late at night!

Double Carob Banana Bread
1 ½ cups oat flour
1 cup all-purpose flour
¾ cup carob powder
½ tsp salt
1 tbsp baking powder
½ cup sugar
3 ripe bananas
3 eggs
½ cup applesauce
1 cup carob chips, plus more to top
Preheat your oven to 350 degrees and oil a large loaf pan. Mix together the first six ingredients into a large bowl. Add the bananas, applesauce, and eggs to a blender. Blend until creamy. Combine the wet and dry ingredients along with the chocolate chips. Stir until just combined. Pour the batter into the prepared loaf pan. Sprinkle some carob chips over the top. Bake for 50-55 minutes, or until a toothpick comes out clean. Let the bread sit for 10 minutes before removing it from the pan.
