Lime Doughuts

Do you ever just want to have a little taste of the tropics? Maybe then you could at least dream of the beach on a dreary winter day. Citrus always brings out a tropical hint in anything it touches, especially these healthified, delicious, easy, zesty, amazing baked doughnuts. Lime is the citrus of choice tonight that will have you imagining warm breezes and sand beneath your feet.

Baked Lime Doughnuts (2)

Baked Lime Doughnuts
makes 6
1 cup rolled oats
¼ cup flour
1/4 cup sugar
1 tsp baking powder
¼ tsp salt
2 tbsp honey
1 cup Greek yogurt
1 tsp lime zest
1 egg white
1 ½ tbsp. lime zest
Preheat your oven to 375, and oil a doughnut pan. Blend the oats into a flour in a high speed blender. Mix the oats, flour, 2 tablespoons of sugar, baking powder, and salt together. In a separate bowl, whisk the egg white, ½ cup Greek yogurt, 1 ½ tsp lime zest, and honey together. Mix the wet and dry ingredients together. Divide the mixture between the greased doughnut pan holes, and bake 8 minutes, or until a toothpick comes out clean. Let the doughnuts cool in the pan for five minutes before removing to a cooling rack to cool completely. Meanwhile, whisk the remaining Greek yogurt, sugar, and lime zest together. Frost the doughnuts with the yogurt mixture.
