Chicken and Broccoli Gruyere Soup1 boneless, skinless chicken breast or large chicken thigh, cut into small cubes
1 cup chicken broth
1- 10 ounce can of cream of chicken soup
½ tsp minced garlic
1 tsp oil
1 cup frozen broccoli
2 ounces shredded smoked gruyere cheese
Heat the oil in a pan over medium high heat. Add the garlic and chicken. Brown the chicken for about a minute per side before pouring the can of cream of chicken soup and the broth into the pot. Bring the mixture to a boil and then simmer for 10 minutes. Add in the frozen broccoli and cook for an additional 15 minutes, until tender. Stir in the cheese until it is melted into the soup, and remove the pot from the heat.
