A Warming Winter Soup

Broccoli cheddar soup has nothing on this bowl of creamy, smoky, cheesy goodness. Actually, I would say that broccoli cheddar soup is my soup's less sophisticated relative. (The one that everyone is embarrassed of when they show up to family functions. That's right, I just put your previously favorite winter time soup on the same level as nasty cousin Bubba.) You will leave all of your former soups behind after the first bite. What makes it so special? Maybe the creamy broth, the tender chicken, or the incredible amount of smoked gruyere cheese? Yes, it is probably the gruyere. So much better than cheddar.... Oh, and don't worry. There is still broccoli to keep the healthy factor....

Chicken and Broccoli Gruyere Soup
1 boneless, skinless chicken breast or large chicken thigh, cut into small cubes
1 cup chicken broth
1- 10 ounce can of cream of chicken soup
½ tsp minced garlic
1 tsp oil
1 cup frozen broccoli
2 ounces shredded smoked gruyere cheese

Heat the oil in a pan over medium high heat. Add the garlic and chicken. Brown the chicken for about a minute per side before pouring the can of cream of chicken soup and the broth into the pot. Bring the mixture to a boil and then simmer for 10 minutes. Add in the frozen broccoli and cook for an additional 15 minutes, until tender. Stir in the cheese until it is melted into the soup, and remove the pot from the heat.
