A Little Bit of Fall for Non-Pumpkin Enthusiasts

What do you do when you are not one of those head over heels for pumpkin fans? We live in a society of absolute pumpkin devotion that manifests in most of the population around this time of year. It seems like sometimes those of us who are not such die hard pumpkin lovers get pushed under the bus this time of year. I have a recipe that will change all of that and make you love pumpkin.

Well, pumpkin seeds, that is....

Pepita Hummus
makes about 4 cups
1 cup dry chickpeas
½ cup toasted pepitas
1 tsp ground cumin
¼ tsp garlic powder
1/8 tsp cayenne pepper powder
¼ -½ cup olive oil or water
Rinse the chickpeas and put them in a small crockpot along with 4 cups water. Cook the chickpeas on high for 3-4 hours until they are tender and done. Drain and rinse under cold water. Combine all the ingredients into a high speed blender or food processor. Blend until creamy, using oil as needed. Refrigerate for at least 3 hours before serving.

I LOVE this hummus! Replacing the tahini with pepitas is definitely the way to go if you want a toss up from your usual. It's also a good way to enjoy pumpkin if you don't necessarily love the typically used puree. You can finally join in on all the pumpkin adoration!
