A Delicous Mediterranean Salad

I love baking (you can probably tell by all, my muffin and bread recipes), but on days like today when it is just too hot and too hectic at my house to cook up a loaf of bread to go with some long simmering stew, I find comforts in easy and delicious recipes like this salad. It is a lot lighter than a big hunk of baguette, but it still satisfies along with bringing some good protein into the mix. Along with some pita and a cold fruit smoothie, this salad makes a great summer meal.

Chicken, Feta, and Hummus Salad (4)
Chicken, Feta, and Hummus Salad
Serves 1-2
4 cups torn romaine lettuce
1 large grilled chicken breast, diced
¼ cup roasted red peppers
¼ cup shredded carrot
½ cup chopped broccoli florets
¼ cup crumbled feta cheese
Mix together the hummus and lettuce. Toss in the chicken, roasted peppers, carrot, and broccoli. Top with the feta and serve.
