Baked Sweet Potato Couscous
¼ cup dry Israeli couscous
1/3 cup water
¼ cup cooked sweet potato, mashed
¼ cup milk
3 tbsp parmesan cheese, shredded
3 tbsp mozzarella cheese, shredded
Preheat your oven to 375 degrees. Bring the water to a boil, add the couscous, and reduce the heat to a simmer. Cover and cook for 10 minutes. Meanwhile, blend the milk and sweet potato together. Add this to the pot with the cooked couscous along with 2 tablespoons each of parmesan and mozzarella cheese. Stir over medium heat until the cheese melts and the mixture begins to bubble, about 4 minutes. Pour the couscous into a ramekin, and top with the remaining cheese. Bake for 15 minutes, and then broil for a minute or two until the cheese browns.
