Sweet Potato Couscous

It has been awhile since I posted any recipes on here. I know I already posted a Disney review today, but I thought a recipe was in order. How does some healthy baked sweet potato couscous sound after all of that not so healthy food at Disney? Although it's packed with veggies, this pasta dish does not sacrifice any taste at all.

Baked Sweet Potato Couscous
serves 1
¼ cup dry Israeli couscous
1/3 cup water
¼ cup cooked sweet potato, mashed
¼ cup milk
3 tbsp parmesan cheese, shredded
3 tbsp mozzarella cheese, shredded
 
Preheat your oven to 375 degrees. Bring the water to a boil, add the couscous, and reduce the heat to a simmer. Cover and cook for 10 minutes. Meanwhile, blend the milk and sweet potato together. Add this to the pot with the cooked couscous along with 2 tablespoons each of parmesan and mozzarella cheese. Stir over medium heat until the cheese melts and the mixture begins to bubble, about 4 minutes. Pour the couscous into a ramekin, and top with the remaining cheese. Bake for 15 minutes, and then broil for a minute or two until the cheese browns.
