Pancake Tuesday

Whether you call it Pancake Tuesday, Mardi Gras, Shrove Tuesday, National Pancake Day, or Fat Tuesday, today is a day to pig out. IHOP offers pancakes for free, so you know today must be special. In some denominations of Christianity, Shrove Tuesday is a day to feast before Lent begins. Lent is a 46 day long fast leading up to Easter. It is meant to symbolize the 40 days that Jesus spent fasting while Satan tempted him. I do not practice Lent (Baptist typically do not), but I still like to participate in pancake day. Who wouldn't?

Of course today's recipe had to be for pancakes. I absolutely adored these extra chocolaty oatmeal pancakes topped with more chocolate chips and toasted coconut. They are way more like a dessert than breakfast, but it is Fat Tuesday, after all.
Chocolate Chip Oatmeal Banana Pancakes with a Chocolate Swirl (3)
Chocolate Chip Oatmeal Banana Pancakes with a Chocolate Swirl
serves 2 (8 pancakes)
1 cup oatmeal
½ tsp cinnamon
¼ tsp salt
1 tsp baking soda
½ tsp baking powder
1 tbsp sugar
1 tbsp corn starch
1 banana
¾ cup milk
1 egg white
1 tbsp apple cider vinegar
1 tbsp melted butter
1 ½  tbsp cocoa powder
2 tbsp shredded coconut
1/3 cup chocolate chips
Mix the milk and the apple cider vinegar together. Set aside. Blend the oats into a flour. Add the oat flour, cinnamon, sugar, salt, baking powder, baking soda, and cornstarch to a bowl. Mix well. Mash up the banana. Whisk the egg, banana, milk, and butter together. Stir the wet and dry ingredients until just mixed. Add the chocolate chips. Use a knife to swirl the cocoa powder into the batter, making swirls of chocolate. Heat a small pan over medium heat. Toast the coconut until golden. Meanwhile, heat a large nonstick pancake pan over medium heat on another eye. Scoop 2 tablespoons of batter at a time onto the preheated pan. Cook each side until lightly browned. Serve with the toasted coconut and additional chocolate chips.
I thought this fun card would go right along with today. It's a birthday card that I made for my friend Patsy. The front is a diamond, and then you fold it out to reveal the inside of the card. Patsy really enjoyed it.
