Grapefruit and Coconut Oatmeal

This sweet and citrusy oatmeal will brighten up your day. I used fresh grapefruit juice to cook the oatmeal in and topped it with some (a little too) toasted coconut. This bowl of oatmeal is far from boring.

Grapefruit and Coconut Oatmeal
1 cup grapefruit juice
½ cup quick oats
1 tbsp shredded coconut
honey, to taste
 
Heat a small pan to medium heat and toast the coconut until golden. Remove the coconut from the pan and put the oats in the pan, toasting them over medium heat as well. Once the oats are lightly browned, place them in a pot along with the grapefruit juice. Bring this to a boil for 1 minute, remove from the heat, and serve topped with the toasted coconut.
