National Send a Card to a Friend Day

Who doesn't like getting a thoughtful homemade card in the mail every once in a while? Well, today is a day set aside just for that. I made this little card to send someone that might need some cheering up a "hug". It can be used for Valentine's Day too, so I am not sure who I will send it to.

And to just make your friend's day that much better, why not send them some cookies to go along with that card? These cookies contain no flour or grain at all, and they are more like peanut butter cheesecakes than cookies. There is nothing wrong with that, though.


Peanut Butter Cheesecake Cookies
makes about 4 dozen
3/4 cup creamy peanut butter
6 ounces softened cream cheese
1 egg
1 1/2 tsp baking soda
1/4 tsp salt
6 tablespoons honey

Preheat your oven to 350 degrees and oil a large baking pan. Throw all of the ingredients into a blender and blend until the dough is well incorporated. Drop about half a tablespoon of the batter at a time onto the pan, spacing each about 1.5" apart. Bake for 12 minutes, or until golden brown. Cool on the baking pan for 8 minutes before removing to cooling racks to cool completely.
