Bring on the Valentines!

Valentine's Day is right around the corner. Now that all the sweets of Christmas have passed along with the post gorging health fest of January, I can post some sweet recipes to share with your Valentine. Don't worry, though. If you are one of the few who have kept to your healthy resolution, you can still enjoy these delicious peanut butter cupcakes without any guilt. Butter free and topped with a healthy banana "frosting", these cupcakes are delicious.

Healthy Peanut Butter Cupcakes with Banana Frosting
makes 12 cupcakes
For the cupcakes:
1 cup peanut flour
1 cup flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2/3 cup brown sugar
¼ cup peanut butter
½ cup applesauce
2/3 cup milk
2 eggs

For the frosting:
3 mashed bananas
2 tsp cinnamon

Preheat your oven to 350 degrees. Mix all the dry ingredients together. Add in the eggs, peanut butter, milk, and applesauce. Once everything is well mixed, divide the batter between 12 oiled cupcake holes. Bake for 20-22 minutes, or until a toothpick comes out clean. Allow them to sit in the pan for 5 minutes before removing to a cooling rack to cool completely. Meanwhile, mix the bananas and cinnamon together. Once the cupcakes are completely cooled, top with the frosting and serve. 
My friend Tori and I had a Valentine crafting party today. We made cards for 5 hours after church, and we're still not done. Another crafting day is in the works. Here are Tori's awesome cards. She is making a different one for her boyfriend to give him each hour.
I made this minion card for Harper. She loves Despicable Me, especially the minions. I hope it makes her laugh.
