Poached Eggs and Grits

Poached eggs just sound sophisticated, don't they? Much fancier than your typical scrambled, fried, or boiled egg, a poached one will leave you feeling enlightened and accomplished. (Am I the only one that feels this way?) They really are easy to make, and pair greatly with grits and cheese. Try this for your next weekday morning breakfast.

Poached Egg and Grits with Cojita Cheese
serves 1
1 egg
1/4 cup dry quick cooking grits
1/4 cup shredded cojita cheese
dash of salt

Bring 1 cup of water to a boil in a small pot. Whisk in the grits, reduce the heat to low, and cook covered for 5 minutes, or until the grits reach your desired consistency. Pour them into a bowl and set aside. Fill a tiny saucepan with 2" of water and bring it to a boil. Reduce the heat to a simmer, and crack an egg into a bowl, careful not to pop the yolk. Gently slide the egg into the simmering water. Cover and cook for 4 minutes. Remove the egg from the water with a slotted spoon, and serve over the grits. Top with the shredded cheese.

Here is the matching purse I made for Harper that goes with the American Girl Doll bag I shared yesterday. It is just a rectangular panel folded in half with the sides sewn up and a piece of yarn tied to each side for the handle.
