Peanut Butter Chocolate Chip Bran Muffins

What is better than a chocolate chip muffin?

One with peanut butter! I could not believe that I did not have a peanut butter chocolate chip muffin recipe, and had to change this at once. An added bonus is the addition of bran that gives these otherwise decadent muffins a healthy fiber boost. Enjoy!

Peanut Butter Chocolate Chip Bran Muffins
makes 1 dozen
1 cup wheat bran
1 cup flour
½ cup brown sugar
1 tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tbsp apple cider vinegar
1 banana, mashed
½ cup oil
1 cup milk
1 egg
1 cup peanut butter
½ cup chocolate chips
Preheat your oven to 425 degrees, and oil a 12 hole muffin pan. Mix all the dry ingredients together except for the chocolate chips. Stir in the milk, vinegar, oil, egg, and banana. Swirl in the peanut butter and chocolate chips. Divide the batter evenly between the muffin holes. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow the muffins to cool for five minutes before removing to cooling racks.

Here is a simple doll skirt/ dress I knitted on a small round loom. It's long enough to wear as a sleeveless dress or a long skirt.
