Chocolate Caramel Pecan Popcorn

I mentioned some of the food gifts that I made for my family before Christmas, but I never got around to posting them. You will probably never forgive me for holding off this recipe for some of the best popcorn ever. Picture sweet caramel corn covered in milk chocolate with toasted pecans. Are you drooling yet?

Because what is better than caramel popcorn?

Yeah, CHOCOLATE covered caramel popcorn.

Chocolate Caramel Pecan Popcorn
1 cups popped popcorn
2 cups toasted pecans
1 cup brown sugar
½ cup butter
½ tsp salt
¼ cup light corn syrup (recipe below)
1 tsp vanilla
½ tsp baking soda
2 cups chocolate chips
¾ tbsp. oil

Put the butter, salt, corn syrup, and brown sugar in an 8 cup microwave bowl. Microwave on high for 3 minutes, stirring halfway through. Whisk in the vanilla and baking soda. In a large bowl, combine the popcorn and caramel. Stir until the popcorn is well coated. Spread the popcorn out on a large baking stone. Microwave for 1 minute, stir, and then microwave for another minute. Divide the popcorn in half. Spread each half onto two large sheets of foil. Set one aside. Combine the chocolate chips and oil into a microwave safe bowl. Microwave for a minute, stir, and microwave for 30 seconds. Pour the chocolate over one half of the caramel corn, stirring until it is completely coated. Allow the popcorn to cool before combining the pecans, chocolate caramel corn, and caramel corn.
 
DIY corn syrup
DIY Light Corn Syrup          
makes ¾ a cup
1 cup granulated sugar
3 ounces water
1/8 tsp cream of tartar
pinch of salt
Combine all the ingredients into a medium sized pot. Heat over medium high heat until it comes to a boil, stirring often. Reduce the heat to low, cover, and simmer for 3 minutes. Uncover and stir every 45 seconds or so until thickened, about 10 minutes. Allow it to cool before using.
