Banana Bran Quinoa Muffins

Bran is just one of those ingredients that add an extra boost to baked goods. I enjoy adding it to all sorts of bread and muffins. Combined with potassium filled bananas and protein packed quinoa, bran helps these muffins to be a healthy breakfast that will get you through the day.

Banana Bran Quinoa Muffins
makes 1 dozen muffins
1 cup wheat bran
¼ cup quinoa
½ cup oatmeal
½ cup flour
½ cup brown sugar
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 tsp cinnamon
1 cup milk
2 ripe bananas, mashed
2 eggs
2 tbsp peanut oil
1 tbsp apple cider vinegar

Cook the quinoa according to the instructions on the package. Set aside to cool. Preheat your oven to 350 degrees, and spray a 12 hole muffin pan with oil. Combine the wheat bran, oatmeal, flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. Whisk the eggs, milk, oil, and apple cider vinegar together in a separate bowl. Combine the wet and dry ingredients along with the mashed banana. Divide evenly between the muffin holes. Bake for 30 minutes. Allow the muffins to cool in the pan for 5 minutes before removing to a cooling rack.
