The Best Cookies Ever!!!

Kringle has done it again. This little elf seems to get naughtier and naughtier. This time he switched out all the stockings with underwear. Harper was a bit surprised, and then she seemed a little put out. Syd didn't even notice it until I pointed it out to her. We will have to wait and see what Kringle does next.
Here is my new official favorite cookie. Peanut buttery, melt in your mouth goodness with a burst of chocolate in each bite. I was so sad to see the last of them. They are a perfect addition to your Christmas cookie collection.

Peanut Butter Chocolate Chip Cookies
makes 4 dozen small cookies
½ cup peanut butter
½ cup butter, softened
¼ cup honey
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1 cup flour
½ cup oats
1 cup mini chocolate chips

Preheat your oven to 350 degrees. Cream together the butter, honey, and brown sugar. Beat in the egg. Once the mixture is fluffy, mix in the peanut butter and vanilla. In a separate bowl combine the dry ingredients. Mix the wet and dry together. Scoop out a tablespoon of dough at a time into balls. Align 2” apart on a cookie sheet. Press the balls flat with the back of a fork. Bake for 8-10 minutes, or until the bottoms are lightly browned. Allow the cookies to cool for 5 minutes before removing to cooling racks.

I love everything about Christmas- from baking, to getting creative with Kringle, to all the wrapping and present making, to singing Christmas carols at church. We actually just had a group of carolers come by my dorm meeting. It is too cold in my opinion to be caroling, but it sounded amazing. I love the way everyone gets together to share Christ's love during this time of year. If only it could always be Christmas...
