- 6 tablespoons hot cocoa mix
- 2 tablespoons mini chocolate chips,
- 1 tablespoon mini marshmallows
- 3 peppermint candies, chopped up into a fine powder
I also made a plain version that leaves out the peppermints and chocolate chips. It only requires 2 1/2 cups of milk.
Only a week until Christmas Eve. I cannot believe it! Santa would definitely benefit from these cookies as they are made from healthy quinoa that will give him a protein boost for his long night. I know for sure that Santa at my house could use some healthier cookies. I made heavenly bits last night, and they are vanishing quickly.
Cinnamon Quinoa Cookies
makes 1 dozen
¾ cup cooked quinoa
1/3 cup instant oats
½ cup flour
¼ tsp salt
6 tbsp sugar
¼ tsp baking powder
¼ cup butter
1 egg white
2 tbsp applesauce
Stir together the quinoa, flour, salt, sugar, baking powder, and oats. Add in the applesauce, butter, and egg white, stirring until everything is well incorporated. Cover and refrigerate 1 ½ hours. Roll out the cookies into 12 balls. Flatten them out on an oiled baking sheet. Bake in an oven preheated to 375 degrees for 18 minutes. Allow them to cool for a few minutes before removing to a cooling rack to cool completely.
