Banana Cream Cheese Oat Muffins

Cream cheese and bananas make these muffins moist and delicious. I love the nice texture that oats give muffins, and try to include them whenever I can in my baked goods recipes. Enjoy!

Banana Cream Cheese Oat Muffins
makes 12
1 cup quick oats
¾ cup flour
1/3 cup sugar
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 ripe bananas, mashed
2 eggs
6 tbsp cream cheese
1 tbsp oil
1 tsp lemon juice
1/3 cup milk

Preheat your oven to 375 degrees and oil a 12 hole muffin pan. Mix together all the dry ingredients. Stir in the cream cheese, bananas, oil, eggs, milk, and lemon juice until all the ingredients are well incorporated. Divide the batter between the 12 muffin holes. Bake for 22 minutes, or until a toothpick comes out clean. Allow the muffins to sit in the pan for 5 minutes before removing to a cooling rack to cool completely.

This is the bag that I wrapped all my penguin loving roommate Hannah's gifts in. It's just a plain paper bag that I made a cut out penguin for out of paper.
