Sunflower Seed Muffins

I had a bunch of sunflower seeds that I didn't know what to do with. What better than blitzing them up and turning them into muffins? These light and airy muffins are delicious, and have no sugar in them. Sweetened with honey and apple juice, they are the perfect morning treat.
Sunflower Seed Muffins
1 cup rolled oats
1/2 cup roasted sunflower seeds
1/3 cup oat bran
1 cup flour
1/2 tsp salt
1 tsp baking powder
2 tsp baking soda
3/4 cup apple juice
1 tbsp. apple cider vinegar
2 eggs
1/2 cup apple sauce
1/2 cup oil
6 tbsp. honey
additional sunflower seeds for topping

Preheat your oven to 350 degrees and oil a regular muffin pan. Blend the oats and sunflower seeds into a flour. Add all the dry ingredients together. In a separate bowl, whisk the eggs, vinegar, oil applesauce, honey, and juice. Stir the wet and dry mixtures together. Divide the batter between the muffin holes, and top each muffin with additional sunflower seeds.. Bake for 20-22minutes, or until a toothpick comes out clean. Allow the muffins to sit for 5 minutes before removing to a cooling rack.
