Peanut Butter Oat Scones

This time of year it seems that everyone gets into a baking mood. I love having the delicious scent of homemade baked goods wafting through my house. (Or in this case, my dorm.) Especially sense it has gotten so cold outside, a nice hot breakfast really hits the spot. These scones qualify as that warm and filling breakfast perfectly. With hearty oats and creamy peanut butter, they go down great with some milk or hot tea.

Peanut Butter Oat Scones
makes 12 scones
1 cup quick oatmeal
1 cup peanut flour
2 tsp baking powder
¾ tsp baking soda
dash of salt
½ cup sugar
1 tsp cinnamon
¼ cup coconut oil
1/3 cup peanut butter
½ cup Greek yogurt
1 tbsp applesauce
1 egg white
 
Mix all the dry ingredients, and then stir in the wet until just combined. (Over mixing will make your scones tough.) Divide the dough into thirds. On a floured surface, roll each ball out about ¾” thick. Place the circles of dough onto a large baking stone. Cut them into fourths. Bake for 12 minutes in an oven preheated to 400 degrees. Allow the scones to cool for 5 minutes before serving.
