A Quesadilla Better than the Rest

Do you want a quick meal that stands out more than your typical quesadilla? Try this veggie hummus quesadilla. It is packed with delicious vegetables, gooey cheese, creamy hummus, and a protein packed egg to tie it together. Yum!
Veggie Hummus Quesadillas (2)
Veggie Hummus Quesadilla
serves 1
1 tortilla
¼ cup shredded Monterey Jack cheese
3 tbsp roasted red pepper hummus
2 tbsp frozen chopped broccoli
3 tbsp frozen chopped spinach
3 tbsp chopped onion
1 egg, beaten in a separate bowl
1 tsp oil

In a small pan over medium heat, sauté the veggies in the oil until lightly browned. Pour in the egg. Once the bottom of the egg is lightly browned, scramble it up. Turn the mixture a few times until it is cooked. Spread the hummus and cheese onto half of the tortilla. Top with the egg and veggies, and fold the other half of the tortilla over. Cook both sides of the tortilla for 30- 60 seconds over medium heat.
