Cravings Satisfied

Nothing helps me wake up in the morning or satisfy that midnight craving like peanut butter. Honestly, the stuff goes great in just about anything. Here are two recipes for any time of day to sedate those peanut butter desires that we all have. The first is an amazing bananacream that combines salty peanuts with sweet raspberries to make quite a treat. Feel free to add more milk and turn this into a smoothie.

Raspberry Peanut Butter Bananacream
1 cup frozen raspberries
1 banana
¼ cup peanut butter
¼ cup peanut flour
¼ cup milk
Blend everything together and enjoy!

These babies are nut butter millet bites. Chewy millet and creamy peanut butter compliment each other well. Who would have known?

Nut Butter Millet Bites
makes 18
1/3 cup uncooked millet
1 cup water
2 tbsp peanut or almond butter
2 tbsp peanut or almond flour
1 tbsp mashed banana
1 tbsp honey
Bring the water to a boil in a small pot. Stir in the millet, cover, and reduce the heat to a simmer. Cook covered for about 20- 30 minutes, or until all the water has been dissolved. Stir the millet every so often to prevent it from burning. Once the water has been absorbed, allow the millet to cool to room temperature. Stir together all the ingredients. Scoop out 1 tablespoon of the mixture at a time onto an oiled cookie sheet or nonstick baking stone. Bake at 375 degrees for 25 minutes. Allow them to cool for at least 5 minutes before removing from the pan.
Lastly, here is a card that I sent to my family today to thank them for driving the 20+ round trip hours it takes to get here. I thought the cut out sheep and cute saying would make it impossible for them not to come "baaack".
