Sushi Time!

Tonight was sushi night for me! Everyone in my family loves going out for sushi, but that can be pretty expensive. We started having sushi night every once in a while where we made it at home. We generally just make California rolls, but I like to get creative with it. Here are my two unique rolls. Enjoy!

Quinoa and Crab Maki
makes one roll
2/3 cup cooked quinoa
dash of rice vinegar
pinch of sugar
1 log of imitation crab meat
1 sheet of nori (seaweed)

Combine the sugar, vinegar, and quinoa. Refrigerate for at least 2 hours. Spread the quinoa out evenly over 2/3 of the nori. Slice the crab lengthwise into 3 pieces, and layer them town along the middle of the nori. Roll it all up from the long end. Cut into 1” tall pieces and enjoy!

Crab and Egg Roll
makes one roll
1 sheet of nori
1 log of imitation crab meat
2 eggs, beaten

Oil a large pan and preheat it over medium heat. Pour the eggs into the pan so that they make a big circle. Once they have set and the top is only a little watery, place the sheet of nori over it. Continue to cook the egg until it is completely done. Remove from the heat to cool. Once it is cooled, cut the crab log into three strips and layer them along the outside edge of the nori, egg side up. Roll it up and cut into 1" pieces.
