Vanilla Chai Pancakes

June is national iced tea month, so I thought I would start it off by giving you a recipe using iced tea.

What in the world can you do with iced tea other than drink it? Make it into a pancake, of course. I used strongly brewed vanilla chai tea to make these. They would go great with a tall glass of sweet tea on a summer day. (Yes, I am from Georgia, so the only iced tea I know is sweet tea. Anything else is just sacrilegious.)

Vanilla Chai Pancakes
¾ cup flour
½ cup strong vanilla chai iced tea (use 1 tea pack per ½ cup water)
1 tsp baking powder
1 egg
1 tbsp sugar
dash of salt
1 tbsp oil

Whisk all the ingredients together. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Top with strawberries.

Here is a peek-a-boo thank you card made by making a huge X in the center of a piece of paper. Fold back the triangles, glue the paper onto your card, stamp on a sentiment, and there you go.
