Pineapple Pancakes¾ cup fresh pineapple cubes sliced in half lengthwise
½ cup flour
½ cup milk
½ tsp vanilla
½ tsp baking powder
pinch of salt
Whisk together all the ingredients except for the pineapple. Preheat a pancake pan to medium low heat and place a couple of pieces of pineapple in the center of it. Scoop a few tbsp of batter over the top. Cook each side until lightly browned.
