The Never Ending Card

How do you make sure that someone really knows that you are thankful? Saying it just once sometimes does not cut it. Good thing I have a solution for this predicament. I give you the never ending card:
Any way you open it, it's not over. It continues to unfold without ceasing.
Every twist and turn of the card brings another surprise.
It is the perfect way to give your thanks over and over and over again.
These pancakes are not never ending, but you sure will wish they were. After devouring the entire batch, you will have to make some more. The secret to their success? Letting the deliciously fresh pineapple take center stage, giving these pancakes an explosion of flavor.

Pineapple Pancakes
¾ cup fresh pineapple cubes sliced in half lengthwise
½ cup flour
½ cup milk
1 egg
½ tsp vanilla
½ tsp baking powder
pinch of salt

Whisk together all the ingredients except for the pineapple. Preheat a pancake pan to medium low heat and place a couple of pieces of pineapple in the center of it. Scoop a few tbsp of batter over the top. Cook each side until lightly browned.
