Pop-Up Panel Thank You Card


This card has a secret hidden panel that pops out when you open it. (It lets the recipient know how thankful you are.)

You all know I have a thing for goat cheese. I polished this whole log off in less than 12 hours, and that was with pacing myself. These pancakes combine the delicious flavor of goat cheese with a sweet blast of fresh strawberries.

Strawberry Goat Cheese Pancakes
1 egg
¼ cup flour
1 tsp honey
2 ounces goat cheese
¼ tsp baking powder
dash of salt
¼ cup milk
½ tsp vanilla extract
2-3 tbsp diced strawberries

Mix together the flour, salt, and baking powder. Whisk in the egg, goat cheese, honey, milk, and vanilla. Stir in the strawberries. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Top with additional goat cheese and strawberries.
