National Strawberry Shortcake Day!

Today is national Strawberry Shortcake Day. I could have celebrated it by giving you a delicious strawberry shortcake recipe along with strawberry shortcake pancakes and a Strawberry Shortcake card (The little redhead doll that Harp is obsessed with.). Instead, I just have a smoothie recipe along with a completely random card and pancake recipe. At least it is a strawberry shortcake smoothie.

Strawberry Shortcake Smoothie
1 cup frozen strawberries
1 banana
½ cup milk
 vanilla mug cake
whipped cream, optional for topping

Combine the fruit and milk into your blender. Blend until creamy. Add the cooled mug cake. Blend again, leaving the cake as chunky or smooth as you want. Top with whipped cream if desired.

Blueberry Cornmeal Pancakes
½ cup milk
1 egg
1 tsp vinegar
2 tbsp sugar
1 tbsp oil
½ tsp baking powder
½ tsp baking soda
1/3 cup cornmeal
¼ cup flour
dash of salt
3-4 tbsp blueberries

Mix the flour, cornmeal, salt, and sugar together. Whisk in the milk, egg, and oil. Allow the mixture to sit for 15 minutes. Add in the baking powder and baking soda. Finally, stir in the vinegar and blueberries. Immediately scoop out onto a pancake pan preheated to medium low heat. Cook about 3 tbsp of the batter at a time. Flip once the top forms bubbles and looks dry.

I am kind of glad I stuck to this card and the blueberry cornmeal pancakes. I stink at drawing people, so Strawberry Shortcake would have been completely botched, and I already have too many strawberry pancake recipes.
