Strawberry Peach Buttermilk Pancakes

Buttermilk just has a special effect in pancakes. It makes them fluffy and good. These pancakes are stuffed full of peaches and strawberries. It really puts you in the summer mood.

Strawberry Peach Buttermilk Pancakes
makes 6
¼ cup strawberries
¼ cup peaches
¼ cup buttermilk
½ cup flour
1 egg
½ tsp baking powder
1 tbsp sugar
pinch of salt
1/2 tsp vanilla extract
¼ cup cubed strawberries and peaches

Blend the peaches, strawberries, egg, and buttermilk together. Stir it in with the baking powder, vanilla, salt, sugar, and flour. Whisk everything together and then stir in the chunks of peaches and strawberries. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Enjoy warm.

Thankfully our weather has gotten nice enough to want summer time fruits. Last week when it was in the 30s, all I wanted was soup and hot tea. Now I'm up for all those summer time favorites.
