Strawberry Lime Pancakes
¾ cup flour
3-4 large strawberries with the tops cut off
juice from one lime
2 tbsp sugar
1 tsp lime zest
½ cup milk
¾ tsp baking powder
dash of salt
1 tbsp oil
Blend all the ingredients together until well incorporated. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Top with strawberries.

Strawberry Lime Overnight Oatmeal
1/3 cup oatmeal
½ cup milk
2/3 cup Greek yogurt
handful of strawberries
Juice the lime. Mix the oatmeal, yogurt, lime juice, and milk together in a bowl with a lid. Refrigerate it overnight. The next morning stir in the strawberries and enjoy. I like to add frozen strawberries and then pack it for lunch. By lunch time, they are slightly thawed and super juicy.
