Strawberry Lime Concoctions

This card has a cool little flap that lifts up to reveal the actual card. I decorated it with a rainbow, slapped a "thank you" sentiment down, and had a card ready for the next person on my list.


These pancakes combine the sweet taste of strawberries and the zesty blast of flavor that only a lime can bring. Absolutely. Delicious.

May is national strawberry month, and this recipe will make you want more and more of the juicy berries. One just is not enough...

Strawberry Lime Pancakes
¾ cup flour
1 egg
3-4 large strawberries with the tops cut off
juice from one lime
2 tbsp sugar
1 tsp lime zest
½ cup milk
¾ tsp baking powder
dash of salt
1 tbsp oil

Blend all the ingredients together until well incorporated. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Top with strawberries.

Strawberry Lime Overnight Oatmeal

Strawberry Lime Overnight Oatmeal
1/3 cup oatmeal
½ cup milk
2/3 cup Greek yogurt
1 lime
handful of strawberries

Juice the lime. Mix the oatmeal, yogurt, lime juice, and milk together in a bowl with a lid. Refrigerate it overnight. The next morning stir in the strawberries and enjoy. I like to add frozen strawberries and then pack it for lunch. By lunch time, they are slightly thawed and super juicy.
