Split Pea Pasta

I really like this card with the little button and matching ribbon. My calligraphy is a little off on it, but overall I am pleased with the results. The butterfly was a stamp my miniterm teacher had. (I made this card during miniterm.)

Here is a single serving pasta recipe that incorporates a serving of veggies along with it. It is easily made in the microwave, only using up a couple of dishes. Quick with little clean up. Those recipes are the best kind.

Split Pea Pasta for One
¼ cup split peas
¼ cup bread crumbs
½ cup shredded mozzarella cheese
2 ounces dry angel hair pasta
1/3 cup milk
¼ cup shredded parmesan cheese
½ tsp Italian seasonings

 
Put the split peas in a microwavable bowl and cover them with 2 inches of water. Microwave for 15 minutes, checking every 10 minutes to make sure the water has not evaporated. After 15 minutes, add in the dry pasta with the split peas. Add some more water to cover if needed. Microwave another 12 minutes. Drain and add the milk, bread crumbs, cheese, and seasoning. Microwave another 90 seconds and serve.
