Peanut Butter Oatmeal Pancakes

These pancakes not only contain the awesome taste of peanut butter, but they are also topped with peanut butter. That's double the love. Light and fluffy, you will want to make these pancakes again and again. At least until you see tomorrow's post and fall in love with yet another pancake.

Peanut Butter Oatmeal Pancakes
makes about 8-10 pancakes
1 1/2 cup quick oats
½ tsp baking powder
3 tbsp peanut butter
1 cup milk
1/8 tsp salt
2 eggs
2 tbsp honey (optional)
 Whisk all the ingredients together. Preheat a nonstick pan to medium heat. Once it is hot, pour about 3 tbsp of batter onto it to make each pancake. Flip once bubbles start to form on the top and the bottom looks dry. Top with extra peanut butter.

The little girl I teach Spanish to gave me a lovely graduation present of two hand sewn bookmarks. I sent her this thank you card. It is kind of an inside joke between us involving a pajaro loco (crazy bird) and my front window. Even if you aren't in on the joke, the card is still super cute.
