Flyaway Butterfly Card

Here is a simple thank you card made with cut out butterflies. (You could use a punch, but I had to trace and cut out mine.) I folded the butterflies down the middle before gluing them on to make them look like they are flying away.
I made this pizza last night for dinner on the spur of the moment. We had leftover imitation crab logs from making sushi that needed to be used up as well as fresh broccoli. I whipped up a Greek yogurt pizza crust, threw on the toppings, baked it, and had an awesome supper.
Crab, Parmesan, and Broccoli Pizza
Greek yogurt pizza crust
2 logs of imitation crab meat
1/4 cup grated parmesan cheese
1/4 cup grated mozzarella cheese
1/4 cup chopped broccoli florets
1/8 tsp garlic powder

Prepare the pizza crust and roll it out on a small baking stone. Cut the crab into bite sized pieces and spread it out over the crust. Sprinkle the cheese, garlic, and broccoli evenly over the pizza. Bake at 425 for 15- 20 minutes.

Since you already have your yogurt out after making the pizza, you can go ahead and make these delicious pancakes with it. Pancakes made with yogurt are thicker than their milk counterparts, and are perfectly delicious. Enjoy!

blueberry almond pancake (4)

Blueberry Almond Pancakes
1 cup flour
1 tbsp flax meal
3 tbsp water
1 tsp baking powder
1 cup yogurt
1/3 cup almond milk
1/8 tsp salt
1 tsp almond extract
¼ cup fresh or frozen blueberries

Mix the flax and water together. Set aside for 10 minutes. Mix the dry ingredients together. Add the milk, yogurt, flax, and almond extract. Stir until everything is well incorporated. Add in the blueberries. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Enjoy warm.
