Cinnamon Raisin Muffins

This card is meant for a graduation, but it could be easily used for another occasion. I was not really sure what to do with the chain, so I stuck it in place with a glue dot.

These muffins are moist and delicious. They do not puff up that much when you bake them, but they make up for their not so Martha Stewart appearance in taste. Enjoy!

Cinnamon Raisin Buttermilk Muffins
1 c. buttermilk
1 tsp baking powder
2 tsp ground cinnamon
¼ cup raisins
1 cup oatmeal
1 cup whole wheat flour
½ cup sugar
2 egg yolks
¼ cup wheat germ
¼ cup applesauce
½ tsp salt

Spray a muffin pan with oil and preheat your oven to 350 degrees. Mix the buttermilk, oatmeal, and wheat germ together. Set aside for 10 minutes. Meanwhile, mix the flour, cinnamon, salt, sugar, and baking soda. Add the all of the other ingredients. Once it is all mixed up well, fill each hole in the muffin pan 2/3 the way full with batter. Bake for 20 minutes at 350 degrees.
