Chocolate Date and Banana Granola

Here is a nice make ahead breakfast or snack idea. I love granola. You can make so many different flavors, and can stir in whatever add-ins you want to make it taste completely new. For this granola, I suggest stirring in chocolate chips, marshmallows, dried apples, almonds, pecans, or dried strawberries. Those all sound so good!

Chocolate Date and Banana Granola
3 cups old fashioned oats
¼ cup oil
3 medjool dates, pitted
1 banana
3 tbsp cocoa powder
1 tsp vanilla extract

Mix the oatmeal and oil. Toast the oatmeal at 350 until lightly browned. (This takes about 15 minutes.) Bring the dates and ½ water to a boil. Drain the water and put the dates, banana, cocoa powder, and vanilla into the blender. Blend until a paste has formed. Mix the paste with the toasted oats, spread out on a baking sheet, and bake at 350 for 15 minutes.

This granola is really good topped with  chocolate date syrup. It takes the chocolate granola to a whole new level by making it double chocolate granola.

Here is a princess birthday card for every little princess out there. What is a better birthday wish than having your dreams come true? Once again, I wrote the sentiment in calligraphy. I guess I am on a calligraphy kick. I have used it in every post this week.
