Carrot Cake Pancakes

Today's craft is yet another thank you card. I know, I know. First it was the never ending graduation cards, and now it seems like the thank you cards will go on forever too. Bare with me. My graduation ceremony is today, so the end of the thank yous is near. I am so blessed to have so many people to write the thank you card to that I am loving every minute of making them. Here is one I am particularly proud of. Although it looks complex, it was actually quite simple to make. All you do is cut out two large squares and glue them together to make an eight pointed star. Then you cut out eight smaller squares and match one up with each star point. Overlap the sides and finish it off with a circle in the middle. So simple. The smaller squares are 3cm by 3 cm, and the larger ones are 6cm by 6 cm.

What is a better way to get your veggies in than by disguising them as a delicious treat? That is exactly what these carrot cake pancakes do. They are secretly good for you, but still taste great. They are even better topped with toasted walnuts and cream cheese. They will make you put the cake down and run for the pancake pan.

Carrot Cake Pancakes
1 medium carrot, peeled and grated
½ cup flour
½ cup milk
¼ cup chopped toasted walnuts
½ tsp cinnamon
1 tbsp oil
1 tbsp honey
2 tbsp applesauce
1 tsp vanilla extract
½ tsp baking powder
dash of salt

Whisk all the ingredients together. Preheat a nonstick pancake pan to medium low heat. Scoop out a few tbsp of the batter onto the pan and cook until the top starts to bubble and the bottom is dry. Flip and cook the other side until lightly browned. Top with cream cheese and toasted walnuts.
