Almond Pancakes½ cup almond milk
¼ cup flour
¼ cup almond flour
½ tsp baking powder
1/8 tsp salt
1 tbsp honey
¼ tsp almond extract (optional)
Blend all the ingredients together. Preheat a pancake pan to medium low heat. Scoop 2 tbsp of batter onto the pan at a time. Cook each side until bubbles start to form, flip, and cook the other side until browned.
This card symbolizes spring time with its sentiment and the flour. I love this time of year when everything is starting to grow, and it is green as far as you can see. Spring has finally arrived in Ohio, and I hope it is here to stay. Earlier this week we had some 30 degree days, but let us hope those have passed. My garden is just beginning to bloom. Little carrots are sprouting up everywhere. It looks like this spring is going to lead into an even greater summer.
