A Kindergarten Graduation

Harper is officially a first grader. She graduated from kindergarten yesterday, and earned a ton of awards. These included an award for losing a tooth and one for reading for 1,879 minutes over the school year. (I wish earning awards in high school was as easy as pulling out a tooth or reading for fun.) Harper was super excited to graduate, but was a little confused about the whole thing. She kept asking why I was receiving so many cards with money in the mail and she was not. She kept saying, "I'm graduating too." My grandparents came to the rescue and gave her cards and some cash. We have one spoiled six year old on our hands.

These pancakes were just too much fun to make. You can create whatever images you want with the cinnamon batter. Feel free to go crazy with it. (I know I did.) Then enjoy a crazy green smoothie made with broccoli and pineapple. It might sound a little out there, but it is really good.
Cinnamon Swirl Oatmeal Pancakes (4)


Cinnamon Swirl Oatmeal Pancakes
¾ cup oatmeal blended into a flour
½ cup milk
2 tbsp sugar
1 egg
1 tsp baking powder
1 tbsp oil
dash of salt
ground cinnamon

Mix the egg, oat flour, baking powder, salt, oil, sugar, and milk together. Whisk until there are no lumps. Scoop out a few tablespoons of the batter into a small bowl. Stir in the cinnamon until it is a dark brown color. Put the mixture into a plastic bag and snip off one of the corners. Preheat a nonstick pancake pan to medium low heat. Scoop out 3 tbsp of the pancake batter onto the pan. Immediately use the cinnamon pancake mixture in the bag to make a swirl in the pancake. Cook both sides until lightly browned and serve warm.

broccoli pineapple smoothie

Broccoli Pineapple Smoothie
1 cup frozen broccoli, slightly thawed
1 cup frozen pineapple puree
½ cup milk
½ cup orange juice

Blend everything together in a high powered blender.
