Muffins in Minutes

Yesterday's post was about the greatness of muffin tops. I went on and on about how no one should even bother to eat normal muffins because they should just eat the tops. It came to my attention that I was so rude to all the regular muffins out there. They might not be as good as muffin tops, but they still deserve attention and respect. Today I am going to give muffins the recognition they need.

I know what you're all thinking. We have no time to bake four different types of muffins. Well, I have a solution for you. All of today's muffins are microwave muffins. They only take minutes to make. Do none of these recipes appeal to you? Check out some of my other microwave muffins. Here's a list of some of my favorites:

Savory Italian Microwave Muffin
½ tsp Italian seasonings mix
1 egg
just under ¼ cup flour
1 tsp olive oil
1 tbsp water

Whisk all the ingredients together. Microwave on high for one minute in a microwave safe mug.

Vanilla Mug Cake
¼ tsp vanilla extract
pinch of salt
½ tsp baking powder
¼ cup all purpose flour
1 ½ tbsp oil
4 tbsp milk
3 tbsp sugar
2 egg yolks

Mix all the ingredients together in a mug, making sure there are on lumps. Microwave for 90 seconds. Enjoy!

Peanut Butter Microwave Muffin
1 egg
2tbsp brown sugar
3 tbsp peanut butter
1 tsp cinnamon sugar
¼ tsp baking powder
¼ c. oatmeal
½ tbsp milk

Whisk all the ingredients together. Microwave 1 minute.

Peanut Butter Microwave Muffin #2
½ cup oatmeal
½ tsp baking powder
3 tbsp peanut butter
3 tbsp brown sugar
3 tbsp milk
2 tbsp applesauce
1 egg

Blend the oats into a flour. Add the rest of the ingredients to the blender and blend until smooth. Pour into a microwave safe mug, and microwave for 90 seconds.

Easter's on its way even though you couldn't tell by the weather. In Georgia we always wore cute dresses and had Easter egg hunts outside. Here in Ohio it normally snows around Easter time. It did today. Hopefully the bright colors of my card will encourage the sun to come out of hibernation. Or come back from migrating south for the winter. Or return from wherever it went.
