The people of El Salvador love pupusas so much that they've made a national pupusa day on November 13. I know why they love these cheesy tortillas. They're delicious! You have to try them. They are so simple to make. You can fill pupusas with meat, cheese, or beans. I picked cheese.

RECIPE (makes 2)
1/2 c. masa harina
1/4 c. warm water
1/4 c. any white cheese (I used swiss.)

Mix and knead masa harina and water. Cover with a damp cloth, and let rest ten minutes.
Form into balls, and make a hole in the middle with your thumb. (Make it look like a little bowl.) Put 2 tbsp of the filling in the hole, and fold to cover the filling. Press into a round. Use a tortilla press or plastic wrap to make it into a round no more than 1/4 in thick. Cook on a med- high skillet for 1.5 minutes on each side.

** One cool thing I found out about El Salvador was that they use the US Dollar.**
